Janet’s mother's Pimento Cheese Recipe

10oz pkg. Kraft Longhorn Style Sharp cheddar cheese grated
2oz jar of diced pimentos
Onion, grated (juice & pulp) start with about 1 tsp., then to taste
Real mayonnaise to desired consistency
Tabasco to taste
Fresh ground pepper to taste


Merc’s Durango Diner Dutch Oven Beef Enchiladas

2 lb 80% ground beef
8-9 white corn tortillas. You will have to buy a pack of probably 30
2 jars Durango Diner Green Chili Sauce
2 cans Hatch chopped green chilies-mild
1 yellow onion coarsely chopped
1 big bag of shredded cheddar cheese
Dutch Oven.
Olive oil for sautéing
Chef Merito Carne Asada seasoning--1 to 2 Tbs then to taste
Jalapeno Dusting Salt--½ to1 Tbs then to taste
Black Pepper--½ to 1 Tbs
Tad of salt

In Dutch oven, with a little olive oil, sauté onion till turning brown, add meat and seasoning and sauté. Pour in the Hatch green chilies. Remove ingredients from Dutch oven.
Bottom of Dutch oven, pour a little sauce to cover bottom. Add 3 tortillas.
Add a layer of meat then sauce and top with cheese. Repeat 3 times with lots of cheese on top.
Close lid of Dutch oven and add coals on top of lid and cook for 45-50 minutes. Serve.
(In oven, I would bake for 50 minutes on 350 or so.)

Randy’s Steak Marinade

1 cup Wesson cooking oil
¾ cup soy sauce
½ cup lemon juice (2 lg. lemons)
¼ cup Worcestershire sauce
¼ cup yellow mustard
1 T black pepper
2 cloves of garlic

Marinate meat for at least 24 hours before grilling. Baste while grilling with left over marinate.

Great on filets, beef and pork tenderloins.
